Korean BBQ Beef Short Ribs

Today we’re constructing some delicious Korean style BBQ beef short rib with some grilled newborn bok choy all cooked up on the Weber Kettle Grill. Full recipe is below!

SHORT RIB MARINADE
1/3 cup ginger minced
1 tbsp crushed red pepper
3 garlic cloves minced
1/4 cup honey
1/4 beaker tamari
1/4 cup apple cider vinegar
1/4 cup korean hot pepper paste
1/4 beaker olive oil
1 tbsp samal oelek( chili paste)

Combine ingredients and covering beef short rib. Cover and refrigerate overnight or at least two hours before grilling.

Set up grill for direct grilling, medium high heat. Add short rib and cook, turning every couple minutes. Brush on reserve marinade and cook until short ribs begin to char and are cooked through.

BOK CHOY
2 tbsp tamari
2 tsp maple syrup
2 tbsp olive oil
2 pinches black pepper

Marinate baby bok choy for 15 -3 0 minutes. Grill over medium high hot until bok choy begins to sear. Serve with marinade and a drizzle of sambal chili paste.
