Today we’re making some delicious Korean style BBQ beef short ribs with some grilled baby bok choy all cooked up on the Weber Kettle Grill. Full recipe is below!
SHORT RIB MARINADE
1/3 cup ginger minced
1 tbsp crushed red pepper
3 garlic cloves minced
1/4 cup honey
1/4 cup tamari
1/4 cup apple cider vinegar
1/4 cup korean hot pepper paste
1/4 cup olive oil
1 tbsp samal oelek (chili paste)
Combine ingredients and cover beef short ribs. Cover and refrigerate overnight or at least two hours before grilling.
Set up grill for direct grilling, medium high heat. Add short ribs and cook, turning every couple minutes. Brush on reserve marinade and cook until short ribs begin to char and are cooked through.
BOK CHOY
2 tbsp tamari
2 tsp maple syrup
2 tbsp olive oil
2 pinches black pepper
Marinate baby bok choy for 15-30 minutes. Grill over medium high heat until bok choy begins to sear. Serve with marinade and a drizzle of sambal chili paste.
